What's to eat for Memorial Day?!

We are grilling pizza's! If you have never tried this, you are missing out!!! My favorite kind is the pineapple, because pineapple gets so sweet on the grill! I also really like a vegi pizza grilled!

To start out, this is the pan you need, from Crate and Barrel.
You can really put whatever you would like on your pizza, but two combinations i have tried are below if you would like to try them!!!

I think it works out best if you have a really thin crust, so try and find some of those! I do love to make my own crust, but it is a little difficult to use dough when the pan has holes!
Pineapple Pizza:
Brush each side of the crust with a little oil and grill on each side to get slightly brown. Then add whatever your favorite pizza sauce might be(the sauce is best if you warm it up a little) and top with turkey pepperoni, pineapple and freshly grated mozzerella.

It takes about 10-15 minutes to cook, but you will just have to watch it!

For a Vegi Pizza, follow the same steps for the crust. You need to grill or saute the vegi's ahead of time so they won't be too crunchy! The vegetables that i use are purple onion, green pepper, cherry tomato's and mushrooms. You can add whatever one's you like in though. Grill or Saute the vegetables, and then pour onto slightly browned crust with sauce already on it. You can add turkey pepperoni to this as well, or just go straight vegi! You will top the vegi's with freshly grated mozzerella and cook it for about 10-15 minutes.

Yummy, i promise you will love these pizza's!!!

Baked Spaghetti for dinner!!!!


Here is another one of Paula Deen's lighter version remakes by Bobby Deen! Its Baked Spaghetti and i am making it tonight, so excited :) Its a traditional dish with a twist and only 294 calories per serving! YaY!!!

I am always looking to try and find cute websites! Traylor Papers is one website that i really like! Light Strawberry cake


I am so excited about this strawberry cake! I have shared with y'all before that Paula Deen's son, Bobby now makes lighter versions of her recipes! I have had my eye on this cake that Paula made for several days! Bobby's version is 711 calories less per serving, so i can't wait to make it!

Alice Springs Chicken remake!

For dinner i tried to remake one of my favorites from Outback Steak house! It was soo good & i majorly cut down the calories! You definitely need to try it!

Ingredients:
4 Chicken Breast
4 Slices Turkey Bacon
Fat Free Honey Dijon Dressing
Nature's Own Season All
Fat Free Cheese

Directions:
Sprinkle Chicken with Nature's Own Seasoning and Grill
In the mean time, cook bacon in microwave or grill, then heat up Honey Dijon dressing for 30-40 seconds in microwave.
When Chicken is done, take a brush and cover chicken with dressing, then break up bacon on top of each piece. Then you sprinkle a little cheese on top of each piece and microwave for 30 seconds each.
* You could do this recipe in the oven too, but the grill is really good!

I am officially signed up for the Chicago Half Marathon! It is my first one, so i am pretty nervous! I have never run that far! Hopefully i;ll make it :) I would love any running tips if you have them!

Yay for Bobby!


As many of y'all know i am a HUGE Paula Deen fan! I love making her recipe's. The problem is that now that i am really focusing on having a healthy diet, i can't make as many of her dishes. The good news is that her son Bobby takes her dishes and makes a lighter version of them! I have tried them and they taste just as good!!! So i thought i would share one with you today, the Macho Nacho's. Try this recipe out for yourself and you won't believe it is light! Don't worry i am still a Paula addict and watch her show all the time! You need a cheat every once in a while ;)

Skinny girl Margarita

Strawberry Trifle Dessert


I tried this new strawberry trifle dessert this past weekend that a friend shared with me and it is soo good! Great for summer time! It is also pretty healthy! Yay!

Ingredients: 1 box strawberries 2 (8 oz) light or fat free cream cheese 1/2 cup sugar 1/4 tsp. vanilla 1 fat free cool whip a pound cake or angel food cake

Directions:
Wash and slice up strawberries Blend Cream cheese, vanilla, sugar and cool whip together Cut cake into cubes Layer all ingredients in bowl as follows: cake, cream cheese mixture & strawberries. Then Repeat

See so easy, you have to try it!!!

Calorie Confusion

I have been dieting for the last several months by eating health & counting calories. I have been able to lose about 30 pounds & i am starting to feel good! However, I am having a hard time losing weight now because i am running so much that i am having a hard time figuring out how many calories i should eat a day! I think i am consuming way too few! If you have any idea's about this they would be greatly appreciated!

*If you want to follow the plan i did, calculate your weight times 12 and then subtract 500 calories a day from that if you want to lose 1 lb a week and 1000 cals a day if you want to lose 2! Never eat less than 1200 though! This really does work! Especially if you add in exercise! :)
