Coupons! Coupons! Coupons!


So recently i have been really into couponing! I have never really used coupons before and i didn't realize i could save SO much! One of my new favorite sites is Hip 2 Save ! You have to check it out! It has grocery, restaurant, health & beauty product coupons and more! It awesome! Also another site i like is Totally Target. I saved 50 dollars off my bill the other day by using coupons! You should give it a try! If yall have any questions on getting started i would love to help! :)

Time to buckle down!


Even though i have been running all summer in training for my race, it has  been very hard for me to stick to a diet with summer vacations! I really need to buckle down now and get off about 15 extra pounds i have been wanting to get off! I figure now is the best time there is to get serious since all the holidays are coming! This way i can hopefully get in a better routine! I plan to keep track of what i eat in a journal so that i do not eat too many calories. I love health and nutrition and like to try new things! If yall have any tips or healthy foods that have been helpful in the past, i would love to hear them!!!
If anyone else is trying to lose weight right now as well, a few things that have helped me are:
*Writing down what you eat
*Drinking lots of water
*Eat Nutrient dense foods such as grapes, popcorn....this way you can eat more for less calories

Is it fall yet?


Phewww it is hot outside! Funny thing that i always find myself begging for the next season! I do really like fall though! It means i can start getting excited for all the fun holidays and i LOVE holidays! Mostly because i love to decorate and make all the yummy foods! Its pretty fun getting to get new fall clothes too :) Since i have started to think of fall it has made me start to think about my favorite fall things to bake! I thought i would share a few with yall, so maybe you can pick up a few new favorites! :) If you have a favorite fall recipe, feel free to share...

Turtle Pumpkin Pie

Ingredients:
  • 1/4 cup caramel ice cream topping
  • 1 (6 ounce) Graham Pie Crust
  • 1/2 cup  Pecan Pieces
  • 1 cup cold milk
  • 2 pkg. (4 serving size) Vanilla Flavor Instant Pudding & Pie Filling
  • 1 cup canned pumpkin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 (8 ounce) Whipped Topping, thawed, divided
  • 2 tablespoons caramel ice cream topping
  • 2 tablespoons Pecan Pieces
Directions:
  1. Pour 1/4 cup caramel topping into crust; sprinkle with 1/2 cup pecans.
  2. Beat milk, dry pudding mixes, pumpkin and spices with whisk until blended. Stir in 1-1/2 cups whipped topping. Spread into crust.
  3. Refrigerate 1 hour. Top with remaining whipped topping, caramel topping and pecans just before serving. Store leftovers in refrigerator.

Apple Pecan Cheesecake



Ingredients:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup (1/2 stick) butter, melted 
  • 1 1/2 cups plus 2 Tbsp. packed brown sugar
  • 4 pkg. (8 oz. each) cream cheese, softened 
  • 1 tsp. vanilla
  • 1 cup sour cream
  • 4 eggs
  • 4 cups chopped peeled apples(about 3) 
  • 3/4 cup chopped pecan
  • 1 tsp. cinnamon
Directions:
  • Heat oven to 325 degrees F.
  • Line 13x9-inch pan with floil.
  • Mix crumbs, butter and 2 Tbsp. sugar; press onto bottom of pan.
  • Bake 10 min.
  • Beat cream cheese, 1 cup sugar and vanilla with mixer until blended.
  • Add sour cream; blend.
  • Add eggs, 1 at a time, mixing on low speed after each, just until blended.
  • Pour over crust.
  • Mix remaining 1/2 cup sugar, apples, pecans and cinnamon; spoon over batter.
  • Bake 1 hr. to 1 hr. 5 min.
  • Cool. Refrigerate 4 hours.
  • Use foil to lift cheesecake from pan before cutting to serve.

Apple Brickle Dip


*8 oz cream cheese, softened
*1/2 cup brown sugar
*1/4 cup white sugar
*1 tsp vanilla extract
*1 pkg toffee chips

Combine all ingredients into a mixing bowl. Mix until smooth & creamy (can use electric mixer). Refrigerate. Serve with chilled apple slices.

I am back!

We are back from Ocean Isle Beach and we had a blast! I have gone there my whole life so it holds a lot of sentimental value for me as well! It was so wonderful to just get to relax! The beach is my most favorite place! It was so wonderful to get to be with the whole family too! I also managed to squeeze in lots of shopping! Yay:) I love not having to cook and instead eat out at some of our favorite restaurants!
