Is it fall yet?


Phewww it is hot outside! Funny thing that i always find myself begging for the next season! I do really like fall though! It means i can start getting excited for all the fun holidays and i LOVE holidays! Mostly because i love to decorate and make all the yummy foods! Its pretty fun getting to get new fall clothes too :) Since i have started to think of fall it has made me start to think about my favorite fall things to bake! I thought i would share a few with yall, so maybe you can pick up a few new favorites! :) If you have a favorite fall recipe, feel free to share...

Turtle Pumpkin Pie

Ingredients:
  • 1/4 cup caramel ice cream topping
  • 1 (6 ounce) Graham Pie Crust
  • 1/2 cup  Pecan Pieces
  • 1 cup cold milk
  • 2 pkg. (4 serving size) Vanilla Flavor Instant Pudding & Pie Filling
  • 1 cup canned pumpkin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 (8 ounce) Whipped Topping, thawed, divided
  • 2 tablespoons caramel ice cream topping
  • 2 tablespoons Pecan Pieces
Directions:
  1. Pour 1/4 cup caramel topping into crust; sprinkle with 1/2 cup pecans.
  2. Beat milk, dry pudding mixes, pumpkin and spices with whisk until blended. Stir in 1-1/2 cups whipped topping. Spread into crust.
  3. Refrigerate 1 hour. Top with remaining whipped topping, caramel topping and pecans just before serving. Store leftovers in refrigerator.

Apple Pecan Cheesecake



Ingredients:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup (1/2 stick) butter, melted 
  • 1 1/2 cups plus 2 Tbsp. packed brown sugar
  • 4 pkg. (8 oz. each) cream cheese, softened 
  • 1 tsp. vanilla
  • 1 cup sour cream
  • 4 eggs
  • 4 cups chopped peeled apples(about 3) 
  • 3/4 cup chopped pecan
  • 1 tsp. cinnamon
Directions:
  • Heat oven to 325 degrees F.
  • Line 13x9-inch pan with floil.
  • Mix crumbs, butter and 2 Tbsp. sugar; press onto bottom of pan.
  • Bake 10 min.
  • Beat cream cheese, 1 cup sugar and vanilla with mixer until blended.
  • Add sour cream; blend.
  • Add eggs, 1 at a time, mixing on low speed after each, just until blended.
  • Pour over crust.
  • Mix remaining 1/2 cup sugar, apples, pecans and cinnamon; spoon over batter.
  • Bake 1 hr. to 1 hr. 5 min.
  • Cool. Refrigerate 4 hours.
  • Use foil to lift cheesecake from pan before cutting to serve.

Apple Brickle Dip


*8 oz cream cheese, softened
*1/2 cup brown sugar
*1/4 cup white sugar
*1 tsp vanilla extract
*1 pkg toffee chips

Combine all ingredients into a mixing bowl. Mix until smooth & creamy (can use electric mixer). Refrigerate. Serve with chilled apple slices.
