Yay! I am so happy to be back and blogging again after a much needed break! I have had so much going on lately and it has felt pretty hectic & stressful! I feel great now though! I hope these last few weeks have been wonderful for you as well!
Today i want to share a fabulous recipe that i just love so much! I am a Carrabas Italian Grill lover and a friend and i decided to recreate the Tagliarini Picchi Pachiu a while back. It is so delicious and fairly healthy or at least it has no cheese in it which is not very common for Italian food! This recipe seriously tastes just like the restaurant! You have to give it a try it is YUM-MEEE!
Recipe:
16 oz. angel hair pasta
6oz. extra-virgin olive oil
6-8 large cloves garlic, sliced
2 cans diced tomatos
4 to 6 basil leaves, roughly chopped
Pinch salt and pepper
* I also like to add chicken, but it is great with or without it!
Directions:
In a pan add the olive oil, garlic, diced tomatos, basil, salt and pepper. Cook on medium to let all the flavors come together. If you cook chicken, it also a good idea to add the chicken into this mixture once it has been cooked. Pour the mixture over angel hair pasta once its done!
